Simple recipes for the wedding table. How to create a wedding menu at home

The wedding table menu is one of the most difficult organizational issues. The choice of dishes becomes somewhat more complicated if the holiday is held at home. Firstly, because the question arises of who will cook. Secondly, after the guests you will have to wash a huge mountain of dishes. Thirdly, there are no ready-made sets of delicacies for a home celebration.

The menu for a wedding at home should be drawn up with a clear connection to 3 conditions.

Menu for a wedding at home

You don’t have to think through the menu for your home wedding table yourself. Even if you arrange everything yourself and have already figured out what to treat your guests to, advice from professionals will come in very handy. You can turn to catering companies from our catalog for help with the delivery of ready-made delicacies, and we will plan the table for your convenience.

A wedding holiday menu at home must include 7 items.

Remember that not all guests can consume meat, eggs, and fatty foods. Don’t forget to include pickles and assorted vegetables in cold cuts, and meatless sauté, stew, and roast in hot cuts. This condition applies to holidays of any scale. Whether you are preparing a menu for a wedding for 15 people at home or welcoming 50 or more guests, the issue of different preferences/restrictions must always be taken into account.

Wedding menu at home: first and second day

Much when choosing dishes depends on the time of celebration and the day of the wedding. The menu for the second day of the wedding at home should be selected based on yesterday’s “surplus”. That is, it is advisable to set clear accents: on the first day - maximum variety, on the second - light, refreshing food with plenty of soft drinks.

Try to make the menus of the first and second wedding days at home different. You can even experiment with different cuisines - for the first day use spicy Mexican dishes, for the second - light French dishes with wine sauce and an abundance of mushroom and cheese fillings.

Homemade wedding menu

Our experts, who have had more than one home wedding behind them, recommend focusing on the most “universal” products for wedding treats:

If your home wedding is planned for the summer, make sure you have plenty of ice and lemon. Homemade lemonade is the best way to quench your thirst.

Menu for a wedding at home for 10 people

The menu for a small wedding for 10 people (+/- 5–6 guests) should be structured like this:

Choose dessert in small formats. A big cake is not necessary for a small wedding. Small cakes, cupcakes, and vases of ice cream are much preferable.

Menu for a wedding for 30 people at home

A wedding menu for 20 people at home should be prepared based on clear proportions. The more guests, the greater the reserve must be provided. The experience of restaurants serving such events demonstrates approximately the following “dosage” per guest:

To prevent overeating, you can use the rules of professional catering. The wedding menu at home for 30 invited people should be divided into appetizers + salads (served first), hot appetizers (after the dance block), side dishes + main course (served towards the end of the evening) and dessert at the end.

Menu for a wedding for 50 people at home

The menu for a wedding at home for 50 or more people should also be served in stages. If the holiday falls in the summer, guests can be invited to the yard (there is more space here, and it’s more fun for everyone to cook together).

Snacks for a wedding can be very diverse, because every housewife wants her guests to be not only well-fed, but also satisfied! Their choice is really great, as they say, for every taste and color. Hot and cold, baked, boiled, tartlets, sandwiches, canapés - you can and should cook a lot! Remember, at such an event it is the snacks that will be especially popular.

In my opinion, the main thing is simplicity and conciseness. Products that are familiar and loved by everyone, which can be found in any supermarket or even bought at the market - these are our choices. To please your guests, you don’t need to look for products whose names you can’t even pronounce. Here it is worth remembering the old proverb: “Keep it simple and people will reach out to you.”

However, do not forget about serving the dishes. Here you can turn around and not limit your imagination.

Perhaps, if you are planning a themed wedding, then you should use its motifs in the design of dishes. This can be expressed in setting the table in a certain color scheme or decorating snacks with interesting figures.

In general, creativity will only come in handy!

How to prepare snacks for a wedding - 15 varieties

A recipe that has been proven over the years - sandwiches with red caviar - will always delight your guests. It is very easy and quick to prepare, and simple decorations in the form of a slice of lemon and a small bunch of parsley can turn it into a real masterpiece.

Ingredients:

  • Red caviar - 170 grams;
  • Unsalted butter - 60 grams;
  • Baguette - 1 piece;
  • Lemon - 1 piece;
  • Parsley - 1 large bunch;

Preparation:

First you need to prepare the ingredients. Rinse the parsley and lemon thoroughly under running water and let them dry on a paper towel. Cut the lemon into slices and tear the parsley into small bunches.

To make sandwiches, it is best to use a slightly stale loaf; when cutting it will not crumble, which, you see, will look more aesthetically pleasing.

Cut it into slices (1-2 centimeters).

Each piece is evenly greased with butter, which should first be taken out of the refrigerator so that it “melts” a little.

Place red caviar in a thin layer on baguette slices, garnish with lemon slices and parsley. We serve it beautifully on a plate and you can serve it to the table.

A simple and modest recipe that will not only decorate the festive table, but will undoubtedly cause a taste sensation on the part of the guests. It turns out very impressive and beautiful, and is prepared quickly and easily.

Ingredients:

  • Crab sticks - 400 grams;
  • Hard cheese - 160 grams;
  • Eggs - 3 pieces;
  • Garlic - 3 cloves;
  • Dill - 1 small bunch;
  • Mayonnaise - to taste;

Preparation:

We prepare the ingredients for our snack. Crab sticks must first be defrosted (this will literally take 30-35 minutes). Boil the eggs, peel off the shells. Rinse the dill under running water and chop finely

Separate the whites from the yolks. Grate the whites into one bowl on a fine grater, and the yolks into another. Grate cheese and garlic into a bowl with egg whites. We also send dill there and season everything with mayonnaise, mix thoroughly.

Unwrap each crab stick and coat with a thin layer of filling. We wrap the sticks into tubes.

Lubricate each stick on both sides with a small amount of mayonnaise and dip in the yolks.

Place the chopsticks on the lettuce leaves and our appetizer is ready!

“You can buy fish like this in any supermarket!” - you say. And yes, you will be right, but what could be tastier (and cheaper) than salted fish yourself?

Ingredients:

  • Salmon - 1 kilogram;
  • Sea salt - 2 tablespoons;
  • Sugar - 1 tablespoon;
  • Black pepper - to taste;
  • Bay leaf - to taste;
  • Lemon - 1 piece;

Preparation:

Let's begin! Let's prepare our salmon. I prefer to take it straight away, it’s faster and easier. We wash the fish under running water and cut it into two equal pieces.

For the pickling itself, I recommend using coarse salt: it has more suitable properties for pickling.

Mix salt and sugar and rub into our salmon.

There is no need to use a lot of spices here, otherwise they will overwhelm the taste of the fish itself. We'll make do with black pepper and crushed bay leaves.

Add lemon slices on top and cover the bowl with plastic wrap. We place a press on top so that it puts pressure on the fish. Place the salmon in the refrigerator for exactly one day.

The next day, remove the press, drain the liquid and put it in the refrigerator for another day.

Cut the fish into thin slices and serve according to your taste!

This appetizer is prepared very quickly. Stuffed eggs are suitable not only for a wedding table, but also for any other holiday.

Ingredients:

  • Salt - to taste;
  • Pepper - to taste;
  • Parsley - 1 small bunch;
  • Pomegranate - 15-30 grains;

Preparation:

Let's prepare the products. We wash the greens under running water, peel the garlic and pomegranate. Boil the eggs, peel off the shells.

Cut the eggs into 2 halves, remove the yolk. Mash the yolks with a fork in a bowl and add finely grated cheese to them.

The next ingredient is walnuts. Finely chop them with a knife and add to the yolks. Squeeze the garlic there, add salt and mix the ingredients. Add 3 tablespoons of mayonnaise, mix everything thoroughly.

Take lettuce leaves and cut them into small pieces. We place each piece of salad in the whites of the egg halves and put the filling in them.

We decorate the stuffed eggs with parsley and add a bright accent - pomegranate seeds. We put our appetizer on a plate and we can serve it to the table.

This appetizer will give you a summer mood and a charge of positivity even on the gloomiest autumn day, and it is very, very easy to prepare.

Preparing a wedding is pleasant, but still a hassle. In the series of these troubles and preparations, there are no less important or more important ones. Selecting and inviting guests, the bride's wedding dress, the groom's suit, the wedding script, music, hall decoration - you can't count everything, and all this needs to be done well and on time. And drawing up a wedding menu is also one of the important and necessary preparations for this celebration.

Not only the mood of the guests, but also the celebration itself largely depends on what and in what quantity will be on the wedding table. Imagine that there are enough strong drinks at the wedding table, and, for example, there are almost no different dishes and snacks left by the second half of the wedding evening.

As they say, “we danced and had fun, and when we sat down at the table, we shed tears.” So what will happen then? And there will be a very unpleasant picture - the guests will slowly (some quickly) and systematically get drunk. There won't be much to eat. There is one general rule for almost all holiday feasts: guests eat only for the first 15 - 20 minutes, the rest of the time they have a snack.

So the lack of food on the wedding menu can result in a lack of fun and the presence of despondency or even scandals and fights at this holiday. After all, excessively drunk people are divided into two categories: sad and aggressive.

But an overly overloaded wedding menu is also useless - a waste of money. And then where to put the food left on the table? It seems a shame to leave it. Put it in saucepans and then eat it for a whole week with the whole family?

Therefore, a properly composed and balanced wedding menu is very important when holding this holiday.

There is no need to worry about how much each dish should be on the table. The employees of the cafe or restaurant where you are going to hold your wedding are professionals and will correctly calculate the volume of each dish and the number of products for the wedding menu, according to the number of people present at the celebration. But the number and composition of dishes for the wedding menu are chosen by those who order - parents or other relatives of the bride and groom.

What to consider when choosing a wedding menu

  • After looking at the selection of dishes that the restaurant can offer you, decide which ones you will order, do not order those that you have not tried
  • If your financial capabilities are limited, do not order the most expensive dishes; you can order similar, but more economical ones
  • For a more varied wedding menu, order more of a variety of appetizers; your guests may have different tastes: someone does not like fish, someone prefers fish to meat, someone may even be a vegetarian. A large assortment of snacks will satisfy the tastes of all your guests
  • The wedding menu must include two hot dishes: a hot appetizer and a main course.
  • Discuss in advance with the restaurant manager how many alcoholic drinks you can bring with you. Alcohol in a restaurant is more expensive than in a store, and restaurant management usually allows you to bring a certain amount of alcoholic beverages, provided that you order some of them in the restaurant
  • Order the organization of a small buffet table; it is necessary when creating a wedding menu. Usually, some guests, after registering at the registry office, when the newlyweds are riding before the wedding feast, appear at the restaurant earlier than the newlyweds. Such a buffet table, where you can put champagne, wine, fruit and a few light snacks that you can take with your hands without using cutlery, will allow guests to feel more at ease. They won't have to stand along the walls waiting for the newlyweds

What does the wedding menu include?

  • Various cold appetizers: vegetable, meat, fish platter, cheese or cheese appetizer, seafood, portioned salads and those in common vases, stuffed vegetables and eggs
  • Two hot dishes, main and hot appetizer
  • Juices, compotes, mineral water
  • Fruits
  • Alcohol: champagne, wine, vodka or cognac, calculation of alcoholic drinks, approximately 1.0 - 1.5 liters per person
  • wedding cake

Serving order

By the beginning of the wedding feast, all snacks should be on the table, including portioned ones, various assorted dishes, juices, mineral water, fruits, alcoholic drinks
. After a short period of time (20-30 minutes), salads are served on the table; there should be several types of them
. Hot appetizers are served to the wedding table approximately after the first third of the wedding evening, when guests have already tried all the cold appetizers
. The main course completes the serving of everything ordered on the wedding menu (except cake and dessert). Whatever the hot dish, it must be served with a vegetable side dish. Before the main hot waiter appears, the waiters must clean the tables, take away dirty dishes, and place clean plates and cutlery. At this time, the toastmaster can entertain guests with competitions
. The crown and peak of the celebration is the appearance of the wedding cake. By this time, the buffet table needs to be converted into a tea table, where you can place a samovar, tea, coffee, sweets, and plates for the cake. Time for tea and coffee comes after cutting the wedding cake. Guests decide for themselves whether to drink tea and when to drink it, they come to the tea table and serve themselves
. Sometimes the wedding menu, dessert, in addition to fruit, may include ice cream and some prepared desserts. They are usually served after cutting the wedding cake.

Wedding menu for the second wedding day

Usually the restaurant is booked for one evening. On the second day there are fewer guests - only close relatives remain. Nevertheless, it is worth considering the wedding menu for the second day. If the wedding takes place in the warm season (late spring, summer, early autumn), it’s a good idea to spend the second day in nature, where, in addition to two or three light snacks, you can cook fish soup and kebabs.

If the wedding is in winter, and there is a small feast in the apartment, you can put two or three salads, homemade cakes and definitely some light soup (chicken, mushroom, just broth with herbs) on the table.

Let your imagination, the skill of the cook and your financial capabilities help you create an excellent wedding menu so that all guests have not only unforgettable impressions of a fun and interesting wedding, but also pleasant memories of a beautiful wedding table and unusually tasty dishes.

Sometimes it is easier to hold a wedding reception at home rather than in a restaurant. Usually this situation occurs when there are few guests and all of them are only relatives and friends. The same thing happens when various anniversaries are celebrated. How to properly create a menu for a wedding celebration at home so that everyone is well-fed and the hostesses don’t think about what else to surprise the guests with?

What should you consider when creating a menu for a wedding at home?

A festive feast is the final note of the ceremonial registration; even at home it can be carried out in an eventful manner, and home photos from the holiday will not be dull.

The first thing you need to take care of is the cooks and waiters. If the banquet is designed for 10 or 15 people, then you can handle it on your own, using 1-2 people to help, but with a large number of guests, for example, for 30 people, banquets will be more difficult to serve, so you either need to hire professionals , or call for more serious help.

It is best to make several changes of hot dishes, because the feast will last at least 5-6 hours. Changing the tables will not only ensure full stomachs, but will also free up space on the tables for more comfortable seating for guests.

Men and women usually eat and drink differently. Therefore, when counting food, you must not forget how many people of both sexes will be present.

If the wedding is themed, then the food should be selected accordingly, if possible: if the wedding is Russian-folk, then the food should be originally Russian; for light summer parties, cocktails and fruits should be provided; for oriental-style weddings, select dishes of the same cuisine.

Don't forget about the table decoration - candles, decorative fabric towels, flowers will create a great mood, even at a wedding banquet, even on the second day of the holiday.

Snacks

Snacks go first. Canapés with cheese and fruit pieces are very popular now.

Red caviar can be an expensive appetizer. You need to make sure that you don’t run out of vegetable and meat cuts, which men actively use to consume strong drinks.

Pickled vegetables - tomatoes, cucumbers, peppers are used selectively, so you should not put too many plates with them, a couple is enough.

Hot dishes

To prepare main dishes you need to use proven recipes. Don't forget to marinate the meat in advance if necessary. Fried poultry, chops, steaks, and zrazy go well. Fish is used as the second main course. You can’t do without a side dish, and it’s better to make it separately for each dish: for example, potatoes are perfect for meat, and rice or buckwheat is perfect for fish.

Salads and sandwiches

There is no need to overload the table with an abundance of salads; it is enough to make a meat, vegetable and one of the young ones’ favorite ones. Please note that cutting salads can be done in advance, but it is better to add sauces immediately before serving.

Sandwiches are a popular dish at banquets; they are made with completely different fillings: caviar, red fish, fresh vegetables, sausage and cheese products. Be sure to make cold and hot options to please every guest.

Drinks

There should be several options for drinks on the table, both alcoholic and non-alcoholic. To make the correct calculation, you need to remember that champagne is drunk only at the beginning, so for a buffet, for example, 20 people, 5 bottles will be enough.

Strong alcoholic drinks are usually drunk by men, but throughout the evening, so for 10 men you will need 4 bottles; based on the total quantity of the stronger sex, you can easily calculate the required volume.

Ladies prefer wine, but keep in mind that tastes are different, so either conduct a survey or take both white and red wine of sweet and semi-sweet varieties. On average, 10 girls use 5 bottles.

Among non-alcoholic drinks, mineral water (carbonated and non-carbonated) and juices should always be present on the table. You need to stock up on this thoroughly, because those who don’t drink will use these drinks as their main ones. If desired, you can make tea, coffee, compote.

Desserts

For sweets, there should be a cake on the table, which is brought out closer to the end of the banquet. You can’t do without fruits, which will be great as a snack for strong drinks and during dance breaks. But candy, cookies, cake, ice cream are at the request of the young; usually this is not used at banquets, since cake replaces all desserts. If the banquet is dedicated to an anniversary, then, for example, a cake for a silver wedding can be decorated in the form of individual portions and laid out on a beautiful stand.

Children's menu for a wedding at home

Don't forget about the little guests who will be at the party. Usually, children do not sit at the table for very long and quickly move on to playing with each other, and after running around, they run back to the table, take the snacks and fruits they like and run away again, so it is better to provide a separate table.

Children do not really like heavy food, so it is enough to feed them hot food once, put on the table several salads, cheese and sausage slices and large quantities of fruits and sweets, also do not forget to stock up on juices and lemonades.

Due to the fact that the table will be separate, the children will not be able to interfere with the general feast, they will be full and can have a snack themselves at any time.

Thus, you need to create a menu according to your preferences, but taking into account the different options for events, having calculated and organized everything in advance, holding a banquet will not be so difficult!

Video on the topic of the article

Good afternoon, my regular readers! And to everyone who is visiting me for the first time, have a great day! So I decided today to pay attention to a truly delicious topic. I am sure that delicious wedding recipes will not only decorate your festive table, but will also be written in your culinary notebook.

You have a wedding celebration ahead, which means you need to surprise your guests, and not only with creative design ideas and original style, but also with delicious dishes. If you haven’t had lunch yet, I recommend having a snack, because after reading the article to the end, you will definitely work up an appetite. So let's get started.

Direct communication

Have you already decided what your wedding will be like? In what style and for how many people is the celebration planned? I'm not just asking this, believe me! After all, the answers to these questions determine what your holiday table will be like. But since I haven’t learned to read your thoughts yet, but I’m working on it, I decided to play it safe and look at a few of the most common options for a wedding banquet.

Classics of the genre

Most often, the bride and groom choose the classic version of the banquet. I hope you have read my articles about and about the nuances of choosing a restaurant, if not, then I recommend that you get acquainted with them.

So, your wedding is designed for 30-100 people, and perhaps more, but in any case you decided to celebrate it in a cafe, restaurant or banquet hall.

Before concluding an agreement for a banquet, visit it on a regular day, taste the cuisine, pay attention to the presentation of dishes and the work of the waiters.

The restaurant staff will help you create a sample menu for your special event, depending on your preferences and wedding theme. I recommend choosing European, Russian or Oriental cuisine that will satisfy the gastronomic preferences of most guests. These could be:

  • Greek cuisine: vegetables and seafood, lots of olives, feta cheese and delicious wine. Vegetarians will appreciate this option.
  • Italian cuisine: seafood salads, grilled meats, cheeses and legume dishes. If the wedding is in the style of a youth party, pizza will be the main dish of the evening.
  • Russian cuisine: sandwiches with caviar, Olivier salad with tongue, herring under a fur coat, potatoes with herbs and aspic with horseradish. There is tea in a samovar, bagels and apples on the tables. Well, what would a Russian wedding be without strong alcoholic drinks and mead?
  • French cuisine: baked trout, cocktail of mussels and king prawns with Provençal herbs, all kinds of julienne, tiramisu and profiteroles.

Process:

We collect the salad in layers, each of which is greased with a mayonnaise mesh.

  2. pickled cucumber;
  3. breast meat;
  4. diced prunes (steam with boiling water before doing this);

It is ideal for a wedding, because rings are a symbol of the connection of two hearts. Moreover, for such a salad you can use any of your favorite puff salad recipes, the main thing is the form. For a round shape inside, use a container (jar, pan or salad bowl). When the layers are assembled, carefully remove the base and make a second circle with a smaller diameter. Well, then it’s a matter of technique, connect the rings and decorate with what you like best (grated eggs, corn, peas, pomegranate, etc.).
